Imbolc marks the end of winter and the arrival of spring and the warmth of the sun thanks to the goddess Brigid. In addition to the symbolic celebration with smudging, candles, and seeds, a proper sabbat should also include meals of gratitude. To inspire you, here are some recipe ideas that you can of course adapt to your tastes. Just note that the ingredients to prioritize are the following:

Milk and dairy products Milk symbolizes fertility and abundance, and is a nod to the lactation of ewes that traditionally begins around this time. Cheese, butter, and yogurt are also appropriate.
Seeds and nuts These ingredients symbolize the potential of new life. Sunflower seeds, pumpkin seeds, almonds, and nuts are popular choices.
Honey Honey is a symbol of sweetness and prosperity, perfect for celebrating the gradual return of sunlight.
Aromatic herbs Herbs like rosemary, thyme, and sage are often used for their purifying properties and their connections to health and well-being.
Root vegetables Carrots, parsnips, potatoes, and onions are typical choices, representing the connection to the earth and the cycle of life.
Cereals Barley, wheat, oats, and other grains symbolize fertility and abundance.
Apples Apples are often associated with wisdom and magic in Celtic traditions.
Citrus fruits Oranges, lemons, and other citrus fruits bring a touch of freshness and vitality, recalling the return of light.
Eggs Symbols of fertility and renewal, they are perfect for quiches, cakes, and other festive dishes.

Brigid's Crown

An ideal bread to accompany the entire meal during the Imbolc sabbat.

Ingredients:

  • 500g of whole wheat flour
  • 1 packet of dry yeast
  • 1 teaspoon of salt
  • 300ml of warm water
  • Sunflower or pumpkin seeds
  • Herbs

Instructions:

The steps are described here for hand kneading, but you can also adapt them for your bread machine.

  1. Mix the flour, yeast, salt, seeds, and herbs in a large bowl.
  2. Gradually add the warm water until a smooth dough forms.
  3. Knead the dough on a floured surface for about 10 minutes (you can also knead it in your machine with the hook).
  4. Let the dough rest in a bowl covered with a cloth for an hour, until it doubles in size.
  5. Knead briefly again, then shape the dough into a symbolic form if you wish (spiral, cross, etc.).
  6. Preheat the oven to 200°C and bake the bread for 30 to 40 minutes.

Nectar of the First Light

A comforting drink that links the Yule festivities and the arrival of spring.

Ingredients:

  • 1 cup milk
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon
  • A pinch of ground ginger

Instructions:

  1. In a saucepan, heat the milk over medium heat.
  2. Add the honey, cinnamon, and ginger.
  3. Stir until the honey is completely dissolved and the milk is hot.
  4. Pour into a cup and enjoy.

Earthly Renewal Soup

An ideal starter to warm up and whet the appetite.

Ingredients:

  • 2 carrots
  • 2 parsnips
  • 1 potato
  • 1 onion
  • 1 liter of vegetable broth
  • Salt and pepper
  • Herbs (thyme, rosemary)

Instructions:

  1. Wash, peel, and dice the vegetables.
  2. In a large pot, sauté the onion in a little oil until translucent.
  3. Add the vegetables, sauté them for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat, add the herbs, and let simmer until the vegetables are tender.
  6. Season with salt and pepper.

Goddess Brigid's Tart

An appetizer that will delight food lovers with the goat cheese and spinach blend.

Ingredients:

  • 1 shortcrust pastry
  • 300 g fresh spinach
  • 200 g goat cheese
  • 2 eggs
  • 1 onion
  • Salt, pepper, nutmeg

Instructions:

  1. Preheat the oven to 180°C.
  2. Sauté the onion and spinach in a pan until wilted.
  3. In a bowl, beat the eggs, then add the crumbled goat cheese, spinach, salt, pepper, and nutmeg.
  4. Roll out the dough in a tart pan, pour the mixture on top.
  5. Bake for about 30 minutes.

Earth Awakening Stew

A perfect side dish for your main course reminiscent of the harvest.

Ingredients:

  • 1 cup of pearl barley
  • 2 carrots, diced
  • 2 parsnips, diced
  • 1 onion, chopped
  • 1 liter of vegetable broth
  • Herbs (rosemary, thyme)
  • Salt and pepper

Instructions:

  1. Sauté the onion in a large pot with a little oil.
  2. Add the carrots, parsnips, and barley, lightly brown them.
  3. Pour in the broth and add the herbs.
  4. Simmer until the barley and vegetables are tender.
  5. Season with salt and pepper.

First Rays Chicken

A lean and slightly tangy chicken.

Ingredients:

  • 1 whole chicken
  • Fresh herbs (rosemary, thyme, sage)
  • 1 lemon, cut into wedges
  • Salt and pepper
  • Olive oil

Instructions:

  1. Preheat the oven to 200°C.
  2. Rub the chicken with salt, pepper, and chopped herbs.
  3. Place the lemon wedges inside the chicken.
  4. Brush the chicken with olive oil and place it in a baking dish with a glass of water at the bottom or on a spit.
  5. Roast for about 1 hour or until the chicken is fully cooked.

Almond and orange cake

Ingredients:

  • 200 g of sugar
  • 200 g of softened butter
  • 4 eggs
  • 200 g of almond flour
  • Zest and juice of one orange
  • 1 teaspoon of baking powder

Instructions:

  1. Preheat the oven to 180°C.
  2. Beat the sugar and butter until creamy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the almond flour, zest and juice of the orange, and baking powder.
  5. Pour the dough into a greased pan and bake for 30-35 minutes.

Apple and cinnamon tart

Ingredients:

  • 1 shortcrust pastry (be careful, avoid industrial and prefer this very simple and quick recipe )
  • 4 apples
  • 50 g of sugar
  • 1 teaspoon of cinnamon
  • 1 tablespoon of butter

Instructions:

  1. Preheat the oven to 180°C.
  2. Roll out the dough in a tart pan.
  3. Peel and slice the apples, arrange them on the dough.
  4. Sprinkle with sugar and cinnamon, scatter small pieces of butter.
  5. Bake for 30 minutes.
